You have never spoken with a Korean about this, have you?
If you had, you would know they are ALL healthy. As a matter of fact, there is nothing better in the world than Korean food.
There are studies that support that capracin (sp?), found in red peppers, has all sorts of health benefits.

JapChae, vegetarian dish, but delish for everyone
Thin rice noodles with stirfry veggies on top, julienned carrots, zucchini, yellowsquash, onion, mushrooms. Yum, I'm getting hungry. Low cal, low fat, excellent source of vitamins and perfect servings of veggies for the day!!

Kimchi is good for you.
Bibimbap is pretty good.
Kimbap.
It really depends on what you like. Doenjang chige. I loved kimchi chige, but I got it made without the meat. With the meat, it's probably less good (the meat they use is really fatty).

Bibimbob is good for you. It has many vegetables and rice, plus an egg for protein. So overall, a lot of vitamins, low in fat, and a moderate amount of protein.
