We'll have champagne to toast the couple. I am going to get a cake, have a veggie tray and a meat/cheese/cracker tray, but what else should I serve?

That all sounds perfect, I would suggest a beverage alternative so people have something other than alcohol to drink. A punch perhaps.

It sounds like the video party guests did not attend the wedding, so it would be fun to serve them wedding cake - even better if you get the same flavor/style enjoyed by the wedding couple in Vegas.

Basically, anything that you can "bring" from the wedding to your party - food, decor, drinks, etc. - would help the guests have the experience that they missed.

Don't leave out the shrimp cocktail-an institution in Vegas. Have a big bowl of ice with cocktail sauce in a dish in the middle, lay the shrimp around the ice with some lemon wedges.
