I think bricks would require longer preheat time because they are cold.

The amount of energy that you would save even if you could reduce the space is insignificant. If you put something like bricks in your oven you would use more energy to heat them. If you expect your needs to be the same for some time, think about buying a small counter-top oven.

You can't. Best advice is get a toaster oven. I used one when I was single and was able to cook many meals for 2 with these.

And they are inexpensive as well.

Just use a crock pot or an electric skillet with a dome cover or an toaster oven. Or sterno.
