Manuka honey comes from New Zealand where beekeepers set up their hives in wild uncultivted areas in which Manuka bushes grow. The bees gather nectar from the flowers of the Manuka bush, which is indigenous only to New Zealand. The honey making process is enriched by the pollution free environment of New Zealand, and certain harvests of Manuka Honey have attracted the gaze of the medicial and scientific community. Some of the Manuka Honey produced has been found to have some very special properties indeed.
It is not as yet fully understood why only some Manuka honey has an antimicrobial property not shared by other honeys. It is an antibacterial property. The presence of this activity can be detected by laboratory testing, which is conducted by the Honey Research Unit at the University of Waikato in New Zealand. Honey that is tested and verified to have a level of 10 or more is given a UMF rating and is referred to as 'Active'.

Manuka honey comes from the Manuka bush, also called the Tea Tree by Captain Cook when he first landed in New Zealand. He saw the Maoris (locals) brewing the leaves to make medicinal tea. Along the line, beekeepers saw that manuka honey was a special honey. Professor Molan, a biochemist working for the University of Waikato, discovered an additional antibacterial property to the Manuka Honey, which has been trademarked by an association. Nevertheless, there are few labs in New Zealand that can test the activity level of the manuka honey without promoting such trademark. By eating organically certified organic manuka honey active, the taste is not as sweet as the beekeepers do not feed their bees with white sugar from Indonesia or else during the winter times and do not treat their hives with pesticices, unlike the non-organic manuka honey. An activity of 12+ is equivalent to 12% antiseptic solution, etc. Naturally, an activity of 19+ is found in the Manuka Honey. Anything higher than that has been modified by Human Kind, which also increase the toxin level found in the honey and had no test done on it for human consumption.
