English muffins
eggs
cheddar cheese slices
Morningstar bacon

But the problem is I don't have a toaster oven, and I'm looking to make at least a few days worth that I can refridgerate and microwave.

Do you think I could pre-toast the muffins, make little circle egg patties, cook the bacon, and assemble it all along with the cheese and microwave it when needed? Would the english muffin get hard?

Should I not cook the veggie bacon ahead of time? It normally requires about a minute for 2 pieces, but that's alone on a plate- if I didn't cook it before I'm not sure how it would cook.

Does anyone have tips for me?

I just thought these would be a nice quick breakfast idea, and relatively healthy, so I'd like to try it out.

Sorry vegans- I'm just a veggie, but I do use organic eggs, and hormone-free cheese. I'd buy organic if I could get my hands on it.

Actually, I do this for my 17 year old son because he likes those breakfast sandwiches that you can find in the freezer section. Expensive though. I actually use the same ingredients that you do!!

This is what I do:

I pre-toast the muffin (LIGHTLY). I pre-cook the bacon. Cool them both completely. Take a small sandwich bag and assemble the english muffin with the bacon and a slice of cheese. I wrap this in a paper towel for moisture control and put it in a sandwich bag. I make all 5 days at one time and he says they are good!

Note: I would keep the sandwich in the papertowel in the fridge AND when cooking. It absorbs any extra moisture and keeps it from getting 'wet'.

I went to walmart and bought a microwave egg cooker for $2.00 (it's meant to cook an egg in the microwave - just a small dish). When he gets up in the morning, he cracks one egg and puts it in the egg cooker and pops in the microwave which takes about 2 minutes (time may vary for your microwave). When the egg is done, he puts the 'package' of sandwich wrapped in a napkin and pops it in the microwave for 30 secs. Cheese is melted and everything is warm. He slips the egg out of the dish on to the sandwich and he is off.

He completes this whole task in about 3 minutes total and is out the door.

We did see this week at Walmart a toaster by Paula Dean. It toasts the muffin and cooks the egg on the side in its own dish. It was $29.00. The heat from the muffin and egg would melt the cheese. I didn't buy it.... it works the way my son does it and I save 29.00!! LOL

I think cooking the veggie bacon beforehand will be fine. I'm not sure if the muffins will stay toasty, they may get soft. If you want to prevent them from drying out and hardening, individually wrap them or put them in an aritight container. Bagels are also good for making breakfast sandwiches. And tortillas, they don't need to be toasted, you can just put whatever breakfasty foods you have on hand and microwave. Yummy!

The handiest sandwich I will each and every have for breakfast could be a banana one. Two slices of bread with sliced banana both toasted below the grill within the oven or within the sandwich press. I do consume a number of meals, served on toast like scrambled eggs, fried eggs, baked beans and many others

Don't know why you want to make it before hand.. making that should take no more than 5-10 mins. Fresh made is best. You are that busy or pressed for time?

The muffin can be fried in the skillet like shortening bread . Then cook every thing else like all way,s put it together and you can nuke it later.

I don't think it's a good idea to precook the eggs. You could prepate everything else and then just fry and egg or two while you're heating the rest.
