Here's a few pancake recipes for you that are vegan frendly.

French Toast

Ingredients:

4 tablespoons flour
2 cups soymilk
2 teaspoons vegan sugar
1/2 teaspoon cinnamon
Dash nutmeg
Vegan bread
Vegan powdered sugar
Directions:
Mix flour, soymilk, sugar, cinnamon, and nutmeg in a bowl. Add flour slowly to avoid clumping.

Dunk the bread; cook in a lightly greased frying pan. Using vegan butter gets best results for golden brown french toast.

Sprinkle a bit of powdered sugar on top.

Comments:
For best taste, use vanilla soy milk.

Easy Pancakes

Ingredients (use vegan versions):

2 1/2 cups all purpose flour
2 tablespoon sugar
2 tablespoon baking powder
1 tablespoon vegetable oil
1 teaspoon salt
2 1/2 cups soy milk or water
(optional: dash of cinnamon)

Directions:

This recipe, simple as it is, always gets requested!

Lightly mix all ingredients in a fairly large bowl; leave 5-10 minutes to rise. Its important only to mix the batter enough to moisten, as overmixing will make the pancakes tough. Gently fold down; leave again for 5-10 minutes if you have the time, and gently fold down again. (I don't usually bother, since everyones starving!) Cook medium to medium-high on an oiled skillet till golden, carefully breaking apart any large lumps with the spatula. Serve immediately.

Serves: 4

Preparation time: 20-30 mins.

Oh-So-Easy Vegan Pancakes

Ingredients (use vegan versions):

2 cups flour (I like to use I cup whole wheat and I cup enriched white)
1 teaspoon baking soda
1 teaspoon baking powder
2 cups soy or rice milk
2 tablespoons oil

Directions:

Mix flour, baking soda and baking powder together. Add milk and oil until just mixed. I use an electric fry pan, but a frying pan on the stove works fine too, but don't forget to put a little oil on whatever you use to cook them with. When cooking cover the pan with a lid. Cook until brown on both sides. You can add raisins or whatever you like in them.

Most pancakes mixes contain buttermilk, milk, or eggs, so no pancakes from a mix. But you can very easily make your own pancake batter. You have a couple good recipes posted here already and "Vegan with a Vengeance" by Isa Chandra Moskowitz has some more (along with vegan muffins, scone, waffles, etc.) If you googled "vegan pancakes" you'd probably get enough recipes to keep yourself in pancakes indefinitely!

Not the ones made with milk or eggs.

There are delicious vegan versions of pancakes, though. It's pretty easy (and inexpensive) to replace cow's milk with soymilk. Here's my all-time favorite pancake recipe:

Pumpkin Pie Pancakes

1 ½ cups unbleached all-purpose flour
3 Tablespoons sugar
1 Tablespoon baking powder
½ teaspoon salt
¼ teaspoon pumpkin pie spice
1 ¼ cups soy milk or other non-dairy milk
1/3 cup canned pumpkin
1 Tablespoon corn oil

1. In a large bowl, combine the flour, sugar, baking powder, salt, and pumpkin pie spice and set aside.

2. In a food processor or blender, combine the soy milk, canned pumpkin, and corn oil and process until well blended. Pour the wet ingredients into the dry ingredients, mixing with a few swift strokes until just combined.

That's it. Use a skillet to make pancakes with the batter.

You can make pancakes without milk or eggs and you could never tell the difference.

Anyone that disagrees can believe it isn't true but that doesn't change the fact that it is true.

if it has milk and eggs like a proper pancake, probably not...

"pancakes" without milk and eggs should not be called pancakes..

Since they contain milk and eggs, I would guess not. Although I'm sure there's some expensive substitute that doesn't taste very good.
