I'm having an "after party" at my house after the employee Christmas party my restaurant is having (I'm the manager, not the owner). Any ideas for a drink or drinks (maybe a punch or a few select cocktails) that I can whip up (that doesn't cost too much money) and won't leave people passed out in my bathroom? Also would love snack ideas. Thanks!

I'd just make a big punch, because it's not too strong, and will serve a lot of people. Then grab a few bottles of wine, and some beer. That's basically tons of variety, and easy as well. There are a million good punch recipes. I know one I've made before is Bacardi Limon, Absolute, and Triple Sec (equal parts each) mixed with apple juice and cranberry juice. It's yummy! You can make sherbet punch too! Just toss some fruit slices in there and it's easy and festive!

As far as snacks, I wouldn't go too crazy, assuming people will just be coming from a party where they ate. Just a few snacks since people love junk food while they are drinking!! LOL Maybe a few small dessert items, like mini pastries and holiday cookies, etc. and then some chips and dip, a veggie tray, etc.

Sangria is a great crowd pleaser and easy on the budget. Get a couple bottles of red wine (a cheap cabernet or shiraz works for me, if you have a trader joes handy I really recommend you pick up some 3 buck chuck, quality doesnt really figure in as much with this), some triple sec, quarter some limes lemons and oranges, add some orange juice, a little simple syrup (equal parts sugar and boiling water, mix thouroughly), maybe some grapes, Mix to taste. Its a crowd pleaser and wont cost too much money. Some people add liquor like brandy or vodka but if you dont want people getting drunk you can skip it.

I don't know where you are or what state you're in BUT this is the very first thing I would do: Find out about your liability for serving alcohol and letting your guests drive.

I KNOW in Pennsylvania: WHEN a person serves alcohol in a bar or at a home AND allows people to drink AND DRIVE:
AND THAT INTOXICATED person who drank at that residence or business has a crash resulting in bodily injury or death, the host of the party or the owner of that business is in DEEP, DEEP, DEEP TROUBLE. Nuf written.

You can usually find those pre-mixed buckets of drinks that can be made and either refrigerated or frozen at Bed, Bath, & Beyond or at Linens & Things. Add a bottle of liquor and you're good to go. I know they have them in mojito, cosmopolitan, margarita and I think around the holidays they have one that's an egg nog flavor. They're pretty good, not terribly expensive, and can be made ahead of time so that they're ready when you get to your house!

There is a very good punch that we always make at parties: Sherbet Punch! It is very cheap and tasty, too. All you do is buy some ginger ale and sherbet icecream. Mix them together- use your brain for the porportions- and wala: the perfect party punch!

Raspberry Margaritas... you can make these before hand and freeze them

Apple Pie- You premake this also and it is so very good.. yummy yum. Altho it is pure booze it tastes just like apple pie... unbelievable.

Snack ideas
Individual Pizzas
******************

English Muffins OR Hoagie Buns split in half (can split again after cooking)
Cheese Whiz
Pizza Sauce
Topping if you choose
Pizza Cheese

Spread the cheese whiz on the buns
spread the pizza sauce over that
Add toppings if you wish (not necessary)
Sprinkle Pizza cheese over the top
Bake until they start to brown on top... serve or freeze
If too large you may cut into smaller pieces.
