I am not vegan or vegetarian-I have tried. However, I would like to cut down on some of my animal product intake.

What are some good substitutes for eggs and milk?
Also, is Tofu the only real substitute for meat? How do I prepare it so that it has some real variety and flavor?

Ener-G Egg Replacer - follow directions on box.
2 tbsp corn starch = 1 egg
2 tbsp arrowroot flour = 1 egg
2 tbsp potato starch = 1 egg
1 heaping tbsp soy powder + 2 tbsp water = 1 egg
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.

I use Ener-G Egg replacer in my baking and cooking, and it works well for me.

For milk, I use soymilk, which you can use cup-for-cup in place of cows' milk. Some people prefer rice milk or almond milk.

For tofu, check out my profile for tips on how to prepare it. For flavor, you will need to find some recipes.

Tempeh is pretty good when marinated and grilled, or you can crumble it into a pasta sauce or chili. Tempeh is an Indonesian food product made from fermented soy beans.

You can also make seitan (wheat gluten) with Arrowhead Mills Vital Wheat Gluten. www.vegweb.com will give you tips on making seitan. I usually make the dough per the box instructions and make simmering recipes from "La Dolce Vegan." But if you're lazy, you can just simmer it in vegetable broth. Harvest Direct also has a Seitan Quick Mix.

There are also many packaged subs you can buy at your local natural foods stores such as veggie sausages, veggie deli slices, veggie crumbles, veggie burgers, and veggie strips for stir fry.

I use Rice Dream. It's really really good. Try and hazelnut and almond flavoured rice dream and you'll never want cows' milk again.

If you want flavour, avoid silken tofu. If there's a Chinatown where you live or an oriental supermarket, get your tofu from there. Get the traditional style tofu. This kind of tofu soaks up all the flavour you cook with. I like to deep-fry the tofu cubes first for the crispy skin and then cook them in whatever sauce. I usually just make the sauce up by using garlic, chillies, basil, soy sauce, water, sesame oil and a bit of sugar.

Substitutes:

Meat : If you are vegetarian try quorn however if vegan go into you local health food shop where there will be loads of fake meats.

Milk : Soya, rice these are both subs for milk

Egg : There is no real sub for egg but if you are making a cake try using oil =D

If it is for ethical reasons, you can find locally produced pasture raised eggs at most farmers markets and local health food stores in the local dairy case. Fresh and delicious and much more humane to the birds than battery cages. See the website below to find some sources:

i've heard applesauce does the trick in baking. and if u like easy frozen meals, most grocery stores now carry tons of soy-meat patties an vegetarian dinners and stuff like that.
