If you're asking about the rice-and-stuff rolled in seaweed, the answer is pretty simple. It's not traditional. There are other (non-sushi) Japanese dishes that contain beef, and maybe chicken. I don't know. But for sushi, it's typically some form of seafood (usually fish... only some shellfish are used).
If you're using sushi as a synonym for uncooked, then it's a different story. Beef is the only meat I can think of off-hand that is consumed uncooked. I've eaten raw beef in the form of steak tartare. If you want to try it, be sure you find a good source. I'd go to a restaurant to ensure that it is properly prepared. Don't get hamburger from the grocery store and try to eat it.
I wouldn't suggest eating raw chicken or turkey. The texture would be funny and there's a high risk of salmonella in this country.

Depends on what you're considering as "sushi". A lot of people think sushi must contain raw fish, but sushi is actually defined as vinegared rice with a topping or filling. That filling can be whatever you like, so you could make some with cooked beef or chicken if you wanted. I've even made sushi with canned tuna salad filling - it was really good! I wouldn't advise using raw chicken or beef though because of obvious health risks.

Sashimi is raw fish. You roll it in rice it becomes sushi.
Sushi has been around for a very long time and sometimes it's tradition that makes food so great, and thats not to say change is bad or experimenting is wrong, ive seen alot of new trendy sushi ideas that work and some disgusting. The california roll is an american made roll that is really good.
Would you want Tuna fish in your Chili, Hell no!
Vise versa, Chicken wrapped in cold rice sounds gross to me.
You never know sushi might revolve into something new in the future. Change is inevetable

sushi just means with rice. basically, you could put anything that you want in it. when i make sushi hand rolls at home, my mother will have a tray that will have various ingredients on it, but no matter what combination you use, it is still sushi. japan is a country with few resources, but there is a vast sea surrounding it. there is plenty of fresh seafood there. i do believe that meat may be more rare or much more expensive there, so they may try to save it for other dishes instead. that doesn't mean that you couldn't make sushi with chicken or beef. it would still be sushi if the rice is there.

Sushi refers to the rice not the raw fish. There is probably no beef or chicken Sushi because Sushi is Japanese and traditionally did not eat beef or chicken. Mainly seafood.

As you know, the Japanese have for centuries eaten fish so they have developed ways to eat it. Beef and chicken was always so expensive. Now days, they teriyaki beef and chicken. I don't know if beef or chicken can be eaten raw. I know there have been warnings to wash counters and utensils clean after working with beef , chicken, and pork. Maybe better to stick with sashimi or sushi.

There are chicken and beef served in sushi resteraunts because sushi refers to the rice on bottom or on top of the fish, plums, or any other food it just isn't that well known and they are usually cooked i believe because a lot of things in sushi resteraunts are cooked just sashimi isn't. But it is very much mainly seafood.

With chicken, there's probably too high of a risk of getting Salmonella poisoning. Beef may be a problem, too, but I guess people who order rare steaks are taking the same chances.
I've heard of horsemeat sushi, though.

Actually Carpaccio and Beef Tartar are both served raw. As for chicken, the obvious answer is the risk of getting salmonella poisoning.
