Get a Seventh Day Adventist cook book! Seriously I am Adventist and most people in my church are vegetarian. You would be suprised at the large variety of loafs and casseroles that you can make. Go to a potluck dinner at an Adventist church and sample everything. I promise you if your mind is open you won't leave hungary. I've only once in my life ever seen real meat at an Adventist potluck!
One of my favorite vegetarian foods {and I am not vegetarian at the present but have been in the past} is Cottage cheese loaf! I also like chopplet roast. Yummy!!!

Most vegetarians will eat dairy (yogurt, milk, sour cream, etc) and eggs...but no meat (chicken, turkey, pork, beef, fish, chicken/beef stock, etc). There are some people, however, who call themselves a vegetarian but still eat fish. Then there are vegans who will not eat any of the things listed above (which also means no butter, or bread that includes eggs). So it really just depends on what type of vegetarianism you wanna try.

OvoLacto Vegetarians eat eggs and dairy, usually quite sparingly.
Vegaquariums eat fish but no other meat or egg or dairy
Strict vegetarians do not eat any direct animal products like animal flesh (including fish), eggs, dairy, and gelatin (it's made from boiled animal bones) but will eat foods containing some animal byproducts such as honey, and use animal products like leather.
Vegans do not eat any animal related anything, including honey, and sugars filtered through bone char (burnt animal bones) nor do they use any items that are animal based, or have animal byproducts, such as leather, or some types of makeup.
There is *much* more to it than this short explanation. I suggest getting some books and searching the web.

Everything apart from:
Meat, Eggs and Dairy if you're a Vegan
Meat and Eggs if you want to go Lacto-Vegetarian (as I am)
Meat if you're Ovo-Lacto Vegetarian (as most people are)
Oh, and don't buy into the crap about 'pescetarians' or whatever they call themselves. A fish is still an animal, you can't be veggie and yet still sanction the killing of marine life.

Don't eat animal flesh. That means stuff that is (or is from) a piece of animal that is no longer attached to said animal. Meat is out, as is gelatin and rennet. That's about it. If you want to go for vegan, then anything that is from an animal period, whether that animal is alive or not, is out.

It depens whether you want to be vegan or vegetarian. Vegans to not eat any meat or dairy. Vegetarians just don't eat meat, but they do eat dairy products.

Just don't eat any meat: beef, chicken, pork, lamb, seafood, broth, etc. Everything else is fine.
