Chicken Adobo
Ingredients
1 whole Chicken
1 tbsp Pepper
1 tbsp Salt
1 cup Peanut Oil
1/4 cup Distilled white vinegar
1 head Macerated Garlic
Preparation
Cut your chicken into pieces, add the salt and pepper, then place in a large saucepan with the vinegar, and macerated garlic, letting it simmer until the chicken is tender. You can add water if you feel the chicken is getting dry. Once it reaches the desired tenderness, add the peanut oil and stir fry until the chicken is golden brown.

Try this, boil a whole dressed chicken until cooked then hang dry. Finely chop ginger, about 1/4 cup, season with salt & pepper, then add olive oil. This will serve as your sauce. Now, pat dry the chicken, chop and serve the ginger sauce over it with your rice on the side.

Maybe Chicken Papaya or Chicken Marungay? The marungay leaves would add a bitter, slightly citrusy flavor that is an acquired taste. In the papaya recipe, be sure to use green papaya NOT ripe. It tenderizes the meat, and ends up kinda like potato chunks

Chicken Papaya
3 to 4 large chicken thighs
4 T. oil
2 cloves garlic, crushed
1 thumb size minced fresh ginger
1/2 t. salt and 1/4 t. sugar
6 cups chicken broth
2 1/2 # green papayas
Cut chicken in 1 inch cubes. Heat oil, in heavy skillet, fry garlic until
browned, remove and discard. Add chicken and ginger, cook until browned, add
salt, sugar and broth. Cover and simmer until chicken is tender. Meanwhile,
cut papaya into 1 inch cubes and add to soup. Do not let the papaya get
mushy. This make about 10 cups of soup. You can cut the recipe in half.

Chicken Marungay Soup
Ingredients
2 lb chicken thighs
1 tb oil
3 in ginger root; crushed
6 cups water
2 md tomatoes; chopped
1 oz patis (fish sauce)
1/2 ts pepper
1 - 2 c marungay leaves
salt to taste
Instructions
Cut chicken pieces into halves. In a large saucepan, heat oil. Brown chicken and ginger. Add water, tomatoes, patis, and pepper. Cover and bring to a boil. Lower heat and simmer for 20 min or until chicken is tender. Add marungay, cover, and cook for 2 more min. Add salt to taste.

Chicken Tinola
1 kilo whole chicken (cut into parts or choice cuts of breast, thighs of wings).
2 1/2 cups young papaya or sayote
1/2 cup dahon ng sili
5 cups water
2 tablespoons ginger (roughly chopped)
1/2 head garlic (minced)
1 medium onion (diced)
3 tablespoons oil
2 tablespoons patis
pinch of salt and pepper
1. In a casserole, heat oil and saute' garlic, onion and ginger.
2. Add the chicken and water.
3. Bring to a boil and lower fire, let simmer until chicken is cooked.
4. Pour in patis, salt and pepper to taste.
5. Add in papaya or sayote, allow to cook.
6. When ready to serve, put in dahon ng sili.
7. Serve hot.
