I've had a really successful lunch party where I made a red onion and Feta tart. Just caramalise 3-4 red onions, chopped, in butter, 2 tbsp Muscavado sugar and 2 tbsp balsamic vinegar. Then top a puff pastry sheet with the onion mixture, and some crumbled feta cheese. You can also add olives. Bake for 15-20 mins in oven and then top with fresh basil. Scrumptious and great with a winter slad of green beans, sun dried tomatoes and spring onions etc. Also pasta with grilled or roasted veg works well and is easy to make. I usually top it with Pesto. Have lots of dips e.g. houmous, salsa with breadsticks, pitta and cucumber / raw veg. A stir fry might be good to make and very colourful.. I use quorn pieces in mine with the veg and noodles. Soup and crusty bread is another one. Oh and Thai Green curry is really easy to make too. You can buy the paste in supermarkets and fry the veg in it. Add coconut milk and you'll have the curry ready in no time. Serve with rice and some spice crackers. Enchiladas (or any mexican might go well )with nachos and dips. Vegetarian paella is pretty easy to make too (there's always a recipe on the back of paella rice packets) and finally an omlette (with lots of onion, mushrooms etc) with a salad might also work well.

You could make cheese enchiladas (if nobody is vegan) or even tofu enchiladas.
Or, instead of avocado tacos as an appetizer, you could do chips and veggies and salsa as an appetizer and do a vegetarian taco bar with tomatoes, lettuce, onions, cheese, and other fixings, and use veggie crumbles instead of meat. For those who don't like analogues, you can heat up some black beans for the tacos.

Eggplant parm sounds good, but for italian dishes I think more people would like a veggie lasagna. There are people who think eggplant is a "texture violation". I've always gotten compliments on lasagna at pot lucks.

Heres a few nice ideas everyone will like!
1.Pizza,you can't go wrong,you can make a gourmet pizza if you like by buying a packet of pita breads or any sort of flat bread,spread it with tomato paste/sauce or barbeque,add cheese or soy cheese,sundried tomatoes,herbs,olives(if you like them),tomato,capsicum,eggplant,thin potato pieces,pinapple.(Really anything!) they only take a few minutes to bake in the oven!.
2.If you eat eggs make a fritatta,bake it in the oven with eggs,spinach and any other ingredients you like!.
3.Soup-make a big batch of vegie soup!
4.risotto,make a mushroom risotto or lemon and cracked pepper.
5.roasted capsicums-filled with rice,vege stock,herbs,onions,mushrooms.
6.Pasta,traditional tomato,wine,garlic ect.
7.tortillas,tacos-filled with sour cream,salad,spicy taco sauce,cheese,and if you like fake meat!.
there are tons of ideas for a dinner!
Have a look at a few cook books or on the internet for some great recipes!.

if u have a barbecue, veggie burgers, veggie skewers with lime

gourmet salads like spinach-strawberry-tangerine-walnut-feta-vinagarette

Sticking with a Mexican theme, make a big pot of vegetarian chili and serve with cornbread,sour cream, shredded cheese, chopped scallions on the side. Have a bottle of Tabasco sauce on the table for the spicy people.

the hit at our house has always been Soyrizo chili cheese fries.
Mix up the Soyrizo in some veggie chili and serve over french fries.
People don't know they are eating Soy (they are thinking Meat) and everyone seems to enjoy it.
