I am on a weight loss program at the moment and I want to start having rice salad for my lunches, does anyone have any good recipes that are low in fat and sugar but still taste good? or does rice salad have too many carbs for someone who is trying to lose weight?

Also if I made the salad on a sunday and kept it in a container in the fridge, would it keep till friday as it would be easier to make it on the weekend and dish it out each day?

Use brown rice and low fat vinaigrette and then any thing else your heart desires after that. I don't see how it could go bad in that short time period, although you might want to keep the dressing off until the day you eat it so it won't get soggy.
