I eat them boiled and sometimes cook them in non-fat spray butter. I know they are not high in fat but can carbs in general make you fat? If your eating low cal does it matter if your eating foods that are high in carbs? And should I stop eating my potatoes?!

All natural foods are what humans are designed to consume not foods manufactured by man in factories. if you are not allergic to a food item then only the quantity and timing of consumption becomes the issue. the body does not need carbs at night unless you will be exercising after. food consumed at dinner and later should be carb free especially for those that do not have body fat under control

I suggest that you cut out other carbs when you eat potatoes. I know that french fries go with a burger, but take the meat off the bun and go with the fries.

I also heard that the skin is full of vitamins and fiber

Carbs dont actually make you fat, but they can contribute. You SHOULDN'T look at making a low carb diet a permanent thing.

Potatoes are fantastic, especially how you prepare them.

use real butter. it tastes wayy better and its not chemicals.
