i dont need people or animals, i am terrible at painting those. landscape, or fruit type of stuff

A landscape might be a good idea. You can do really nice ones without having to be as accurate as w/portraits or flowers etc.

How about some garish bird (like a quetzal or painted bunting,) or some butterflies?

Pick one. They are deceptively easy and impress beyond reason. Just start with a 'lifesize' Xerox-copy to get you started.
