Most guys I know that live alone love to cook.
So... for a gift basket... I suggest a basket full of Herbs and Spices.
Put in all the stuff he needs to start an 'herb garden'. Like the kind that grows on the window sill. Add to this ten or so of the little bottles of spices. Don't forget to add beef and chicken bullion cubes. And.... seafood and meat seasonings.
To this you could also add in some fun bottles of hot sauces, some salsas, and just unique things he can add to his food to spice it up.
A fun touch is to get him some masculine looking candle holders that would match his decor and some long stem candles for when he invites over a special 'dinner guest'.
And... you can add in a whimsical masculin heavy duty cooking apron for him to wear in the kitchen while he is cooking. And maybe even a 'chef's hat'. :o)
This will keep it from looking as if you were trying to do his grocery shopping for him, and make it look as if it were a starter kit for kicking off the meals in his new home.
Another idea is a basket of 'Emergency' household items. Such as a weather radio, big chunky candles for when the lights go out, a flashlight with a back up pack of batteries, box of matches ( for the candles).... an umbrella... those types of things.
Another idea... is a basket of cleaning supplies. Such as small scrub brushes, cleaning rags, Clorox wipes cannister, SOS pads... little scratcher pads for washing dishes.... dish towels and hand towels for the kitchen.... ( all in masculine colors.)
And....if you dont like the Herbs and Spices basket... you could do a baking basket. Get him the new rubbery baking dishes that are non-stick along with all the mixing bowls and baking supplies. Add to it some boxes of baking items such as blueberry muffin mix, brownies, and cakes with icings.

How about Starting a Tradition?
Pass along one of your own family traditions, such as bringing an iron cricket on the hearth for good luck, a wreath which symbolizes hospitality (guys like them but prefer being able to recieve one, hang it and be able to say..."yeah, Katie gave me that when I moved in..." rather than admitting they went out and bought one since they really wanted one..., or a leather guest book for visiting friends to sign and leave a sentiment in, in the coming years.
How about a Gift of Memories ?
Bring a photo album of your special times together. After a few pages of pics, leave the remaining for a photo of their new home and pics of upcoming memories to be made in the home. Bring a digital camera and a photo printer and offer to take a pic or two of the other guests enjoying the evening or in a pic with your friend and add them to the album before leaving. This can be an inexpensive gift that will be treasured now and in the future.
Hope these ideas help or bring others to the surface. Whatever you decide, I'm sure it will be a well thought out and touching one. You aren't leaving it to the last minute, so you are already ahead!

New towels... Get soft plush towels/wash cloths in a neutral tone... Also, maybe a cool air freshner for the bathroom.. I just bought reed style air fresher... They look modern,cool and last for months ! I picked a few up at Kohl's dept. store on markdown for $2.59 ! Maybe some nice soft neutral toned sheets for his bed ! Or some artwork for the wall.. Provided you know his taste..
Maybe some cleaning products... If you want something cool looking METHOD brand has modern looking cleaning products in nice bottles.. It's available at TARGET. Or just get a laundry basket and put some dishsoap, dishwasher detergent, bathroom cleaner/sponges. Toilet brush. That sort of thing.. That way it's all there/neat when he needs it....

I'm actually moving into my own place in January that I just bought, and I will have a similar party, I will like bottles of wine, or a gift card to Bed Bath and Beyond.

Food is usually a safe bet. Try to get something you know he likes. For many guys beer or other libations work too.
As for other stuff, it depends on the guy and if this is his first ever place. If it's his first place, basic kitchen needs will probably be okay. For anything else you'll have to go by what you know of the guy.
