Cyanide. You stop breathing. Then you die.

It's not instant or near it. But Hemlock was commonly used as a relatively fast poison. I think nearly all poisons then would take about an hour. For fast, a bite from a cobra worked. With chemical compounds since the 1700's there are some that are fast. Remember even cyanide gas in execution chambers takes seceral minutes, and I've heard of 20. Unless injected directly into a vein, I dont think there is an instant one. In the vein, the injection of an air bubble or just about anything van have almost immediate results.

Japanese Blowfish (Fugu) is a delicacy, but the liver and entrails are deadly poisonous, even have to be removed by an experienced (and licensed) chef.
If you give someone that you can easily kill them and the poison can't be traced, as not many Western Doctors know what it is.
There is a Columbo epoisode devoted to that.

Hemlock will make your eye pop out and steam pour out from your navel. Poprocks and coke are also lethal.

Now that I see you aren't trying to kill anybody I will answer seriously. cyanide would be the fastest thing available in those times. It still remains one of the most powerful poisons known. Causes death by respiratory arrest. The person might draw some breaths, but the cyanide would make it impossible for their body to utilize the oxygen. The victim's skin turns blue. I bet a lethal dose would kill in about 2 - 3 minutes.

Cyanide probably.
Bonds with Hemoglobin irreversibly; therefore rendering it useless in O2 transport, and death follows quickly at the right dose.
