The same way that they dry the candy coating on jelly beans or on bubble gum balls. They tumble them around in a rotating barrel with warm air passing through it.

the chocolate never dries it just cool down and get solid again. for the round chocolate with filling of any kind a 2 piece mold is used being each piece a half of the esphere. after melted chocolate at the proper temperature (84- 86)
has been injected the mold passes through a shaker which takes the air bubles out and then it goes to a cooler to bring it to a temperature of at least 60 degrees.
