From what I remember of grade 12 biology, the food does not enter the gallbladder and pancreas.
Instead what happens is that the pancreas produces digestive enzymes and secretes these into the small intestine where it breaks down the food. It is also the "warehouse" for producing important hormone, such as insulin.
The gall bladder stores bile.

The pancreas secretes various enzymes and insulin. Your body eventually breaks-down food into sugar insulin opens up your cells and let's the sugar go in. The cells use the sugar for energy. Food first starts digesting in your mouth with chewing and silavia, which has enzymes in it. Then it goes into your stomach where it is digested even more with acids and enzymes. then it goes in the small intestine where the nutrianes are taking out and absorb into the blood stream. Then it goes into the large intestine where the water is absorbed. Then you crap out whats left. The food doesn't go through the pancreas or gallbladder this is where the chemicals are made that break down the food.

It doesn't go into either one, the gall bladder and the pancreas release fluids to help digest things, via tubes into the stomach & upper intestine area. What they shove there helps break down the structure and things process easier.
