Three men checked into a hotel room for which they paid $30. The next day, the manager realized that the men had been overcharged. She gave the bellhop $5 to return to the three men. On the way to their room the bellhop decided to keep $2 for himself, and give each of the three men one dollar. The three men had now paid $9 each, or a total of $27. This plus the $2 the bellhop kept makes a total of $29. What happened to the other dollar?

You are taking two different scenarios and putting parts of them together to make an erroneous assumption.

They paid $30 for a $25 room. By only giving them back three dollars, the cost of the room became $27 instead of the $25 it was supposed to be. This is where the bellhop gets the $2 "tip" (27 - 25 = 2). You don't subtract $3 from the $30 they paid to figure out how much they each paid, you add $2 to the $25. If they had actually gotten back the $5 then they would have each paid $8 1/3 dollars for the $25 room (25/8 = 8 1/3). Making the cost of the room $27 instead of the $25 it was supposed to cost them simply increases the loss to each of them by 2/3 of a dollar.

In other words, the bellhop wasn't refunding them any money, he was taking money from them. $2 to be exact. You can't look at the problem as being one of them getting a refund, which is where the flaw comes about.

You don't add the $2. You subtract it getting $25 which is $30-$5.
