Dogs like to eat a carcass because it actually keeps them de-wormed.
A Dog was born to eat things that make humans puke, their digestive system is much different from humans.
When a Dog gets hungry it will eat most anything it finds appealing and that is gross to me, but to a Dog that's a tasty treat!

Simply put, your dog doesn't find the nasty smells your talking about disgusting. It doesn't know what disgusting is. When you see a dog sniff another dogs bum or ball's or fanny, you think "oh god" Your dog thinks, "hey I think I know you" **** doesn't smell the same to a dog as it does to you or I. He can smell waaaaaaaaaaay beyond the ****. And he will be able to detect any undigested food, hence why some dogs eat there own poo.
They're dogs they do what dogs do. And they have no comprehension of disgusting or nice. It's just a smell.

Dogs roll in smelly things to hide their own scent. It's a very common trick of predators. Wild predators will often roll in the droppings of their prey to help them sneak up on that animal.

I think they find it appealing because sometimes when a dog smells (droppings)it knows what animal the stuff came from.For dogs its just like reading a newspaper!

To a dog and many canids, smell is communication. It's like reading a book to them. It's not a matter of pleasant/unpleasant odors, but they can tell who has been where and when.

disgusting smells are in the nose of the snifer (kinda like beauty in they eye of beholder) plus dogs have such a keener sense of smell they probably are smelling things on a different level than we do

How do you know that they find them appealing? They might find them to be interesting or of some importance, and so sniff at them a good deal, but that doesn't equate with finding them appealing.

One reason is to disguise their smell as a predator (left over from their wild ancestral behavior).The other is that it is the equivalent to humans smelling good, only to dogs smelling bad makes them appealing to other dogs.

Goes back to their "wild" roots.
Wild dogs (wolves, coyotes, etc) are predators and by finding and rolling in say, moose poop, prey animals would think "sniff? what's that? oh just a moose..." and allow the wolf to slink close enough to kill them.
It kills their own natural smell, it's just instinct, and they don't think it stinks....
