Biscotti are about the best thing you can bake in advance for gift-giving. They keep at least a week at room temperature if well wrapped up, and they freeze beautifully for at least a couple of months. (If you're going to dip them in chocolate or anything, I wouldn't do that before freezing.) Plus they're sturdy, so they won't turn to dust if you send them by mail. I don't find that the type of fat you use makes any difference to how well they keep; I always stick to butter because it tastes best. Baking biscotti when it's icy outside sounds great--have fun.

Biscotti, which is Italian for "twice baked" keeps for a very long time, certainly more than two weeks if kept in an air tight container. If you did bake them twice, which is essential, mostly all of the moisture will have been cooked out. This leaves a very inhospitable environment for bacteria to grow. They should keep upwards of 3-4 weeks if properly stored and cooked.

I did a bunch or research for you, and since I was personally thinking about trying my hand at making some, discovered that the general consensus is somewhat varied. It seems, though, that 2-4 weeks is the opinion, with the side notes that if they lasted more than 1 week, you haven't done them right!

note:I think I would make them ahead, freeze and then before delivery, would dip them in chocolate should I decide to even do that!

IF you use real butter in your biscotti, make it as close to delivery as possible for the best flavors. If you use butter flavored Crisco, it will keep in an airtight container for a week or so.

My mom bakes a lot of them all the time. Freeze them, they'll last for months. My dad will only eat homemade, he has to have them every morning and dip them in his coffee.
