It means they are talking about a siamese, look up pictures of them for examples
When looking straight in the cat's face see how the top of the head is wide and round and the chin is flatish and the sides of the face taper inward slightly, that is apple headed

That's the OLD standard for the Siamese cat, before the breed clubs changed the look of the head. They got a lot more pointy compared to what they used to be.
If you remember the Disney movie That Darned Cat, that was an apple head siamese. To see the new look, just google a siamese breeder site and you'll see how extreme the heads have been changed.

For the siamese cat breed, if you've ever looked at the shape of their head, its pretty pointy. But, there are some that have a more round face/head, and that is the "applehead" variety. I think years ago (like 20 years ago) the applehead was more prevalent, but now, you see more of the pointy-headed siamese cats.

like everyone else says, it's refers to the round shape of a cat's head. it also referred to as a "cobby." some breeds are noted for it: british shorthairs, persians, cymrics, scottish folds to name a few. it's generally very round with very big eyes.
as for siamese, it most certainly can refer to them as well. there are two types of siamese head shapes: classic (like the cats in lady & the tramp) and traditional/applehead. two very different looks to the same breed. both cfa registered styles, although the classic type is preferred in shows.

It can either mean the shape of the head in certain breeds, or simply the shape of unneutered tom cats - they tend to develop very broad heads in adult life, it's part of their sexual characteristics, makes them look tougher and meaner for attracting a mate!
It most certainly is NOT the siamese shape of head, siamese head shape is the complete opposite of the apple shaped head!

say some tells you that their siamese cat is a apple head, it means it has more of a round head compared to the wedge headed siamese which is slender and more wedge shaped
a lot of people say that apple headed cats look more normal
