So the same thing happened to me today but only in a different scenario. Well, this boy named Ed remembers a lot of things and it just happened to slip my mouth and I called him an elephant because elephants are known for their memory. Ed happens to be an over-weight guy so he might have took this offensively. I didn't mean this to intentionally hurt him but saying sorry would also mean that I would be agreeing that he is fat. But I wish I had said, " I didn't mean for it to come out that way."
Just apologize though because it is a way for her to know that you acknowledge her feelings and that you didn't mean to intentionally hurt her. If you are uncomfortable with apologizing then just be more friendly or wear a smile every time you look at her to just know you care.

Looks like you've already solved this, by explaining yourself. But I'll put it this way for you: if you explained it, she should take it into stride and just laugh it away. If she sulks and acts nasty to you, then she really deserved to be called hideous.

Make a bit of a joke of it, but just get her on her own and explain very clearly that you didn't mean it, and offfer to take her out for a drink after work or something

I would just tell her your sorry and you did not mean to do it. Its that easy. If she does not understand that then its her problem at that point. You stepped up and apologized and explained what you meant to say and thats all you need to do
