I am wanting to make Pepperming fudge for our holiday get-together. I found two recipes for it, but since I have not made fudge before I don't know which will be best. They are both the same (sugar, evaporated milk,butter,marshmallow creme, vanilla milk morsels) except one calls for 1/2 cup crushed peppermint candy and the other calls for 1/4 cup, but then adds 1 teaspoon vanilla and 1/4 teaspoon peppermint extract.

the difference is the one with quarter cup of candy has less bits of candy but with same flavor because you are adding the peppermint extract...

at this point it is a matter of preferance since you haven't made either before. Do you want lots of candy bits or less candy bits?

Personally, I'd rather have the one with the 1/2 cup crushed peppermint candy, because the other one would have a much more intense peppermint flavor with the extract. I'd prefer the fudge to be more chocolate tasting with a little peppermint crunch.

But, if you like extra peppermint flavor all throughout, go with the one that uses the extract.

Do a combo of both:

Use 1/4 cup crushed peppermint
add vanilla extract
leave out peppermint extract
decorate the top w/ a tad more crushed peppermint

Go with the one that adds vanilla, so that way you don't overpower the fudge with peppermint.
