It has to do with economics. The more corn we produce the more things we have to think up to do with it, in order for subsidized farmers to stay employed. As corn becomes cheaper because of supply, demand rises to find new ways in which to use the surplus. As we find new ways to use it, more corn is produced at an increasingly less-expensive rate to meet new demands, and the cycle repeats itself. About 1/4 of the items in a conventional supermarket contain corn in some form, often in many different forms. For example, McDonald's chicken nuggets contain 13 different corn ingredients!
I think we should stop eating it and use it for ethanol--NASCAR already does, and God knows we have plenty of it. The Continental philosophers warned us about this very problem; Martin Heidegger compared modernized food production to the Nazi concentration camps, calling them "corpse factories". If only he could see us now! It is an evil analogy, but apt nonetheless.
Tell me what you eat and I'll tell you what you are. If our diets consist primarily of herd-animal feed, well...

It's a very cheap sweetener made from corn. Corn is very, very cheap.. Almost free, in fact due to the subsidies farmers receive. If corn cost the same as regular vegetables, like tomatoes, you would see a lot less corn syrup being used.
With ethanol production going up, and a possible end to the farm subsidies in the next couple of years, you may see less high fructose corn syrup being used.

I wonder that often as I'm allergic to corn and so it makes it difficult. It is a cheap sweetener however so they use it. Organics will most likely use cane juice or other natural sweeteners and not use corn syrup so if it's a problem, switch to organic.

$$$$$ fructose is one of the least expensive artificial sweeteners to produce plus it gives the item body/substance
btw i buy only pure maple syrup---if you have that than try Aunt Jemima you'll kick her to the curb when you realize how bad it tastes-lol
