How about chicken? Stuff rosemary, thyme, garlic and half a lemon into the inside of the chicken. Rub salt, half a lemon and pepper on the skin and dressed it with olive oil, chopped rosemary & thyme. Baked in an oven for 400 degree for about an hour. It should taste great.

Rack of lamb is also great, but that is complicated.

Sweet potatoes are really easy to make and delicious. There are a million simple recipes. I bake them in the oven for an hour (with the skins on). Make sure you wrap them in foil and poke holes in the potatoes. Then fill them with equal parts brown sugar and butter. Put a little salt and pepper on them. You'll know they're done when they are squishy.

I made them two days ago.

I am making a spanish dish ...... roasted pork, rice, & beans (Pernil & Arroz con gandules). My aunt is making oxtails in the slow cooker. My side dish will be collard greens, candied yams. I don't know what side dishes she will make. Then her daughter may bring bacon wrapped chicken breast or her delicious ziti. I am making a fruit, jello, & cookie or cake trifle.

Ham! Then, you’ve have plenty of leftovers for sandwiches. And save the ham hock for a bean soup. I cheat and pick up Honeybaked Ham. They have a bean soup mix that’s awesome.
