Okay.. that is true for long term storage.

However, you can keep butter covered on the counter if you plan to use it within a few days to a week.

Covered butter will NOT go rancid in a few days at normal room temperatures. Depending upon the butter (salted or unsalted), the salt will inhibit bacterial growth. Also, the low water content will inhibit bacterial growth.

but if I keep it in the fridge, i would have to put it in the microwave to soften it.

Most of these rules are for people who do not know how to keep their kitchens clean and don't keep their kids out of stuff.

they are also the ones who are afraid of every little germ that might get into the house so are promoting the super germs with their nasty nice ways.
