I have always loved my mom's 'modern and convenient' Western and Chinese dinners accompanied by boiled white rice. Typical fare would include:
Campbell's Vegetable Soup (with ABC pasta)
Fried Pork Chops w Spanish Onions (worchestershire sauce)
Chinese style Omelette w Libby Corned Beef, Red Chillies
Stir Fry Mix Vegetable w Shrimps in Oyster Sauce
Grilled Honey Chicken marinated with Soy Sauce
I miss her so much.

The great thing about these tatties is that you can boil them off (pre-cook) the night before. they come together in just a few minutes just as you are ready to serve the rest of your breakfast or brunch.
one bag of small potatoes
seasoning
1 - 2 tablespoons of olive oil (virgin is best)
Place the tatts in a large saucepan. Add a teaspoon of salt and cover with water. Don't peel the tatts, coz the skin keeps the potatoes together.
Bring the water to a boil over medium-high heat. Reduce heat and simmer until tender enough to slide a knife in easily.
[ It is important not to over-boil them, for golf ball size potatoes about 8-9 minutes.]
Drain your tatties and refrigerate until you are ready to brown them in a large skillet.
Heat the olive oil in a large skillet over medium-high heat. [ the tatties will practically double in size when finished, so use a large enough skillet] Smash each potato with a masher. . Season with salt and pepper and cook until crispy then turn to cook the other side the same.
Sprinkle with fresh herbs, and you are ready.

My mum is an amazing cook and she makes all kinds of things that are tasty but healthy too. She often makes pretty simple meals like pasta, stir fries and curries. She does a very scrummy roast dinner and makes the best christmas cake ever!

She doesn't really cook but if it's a blue moon, she'll just pop some meat in the oven. Usually some pork chop or steak. I guess she can't take the heat. My dad cooks more but not a like.

my mother's cooking is the reason I learned to cook - not because hers was good, oh no, it was the worst. Tinned soups and bread sandwiches were her best. Potatoes were always chewy and I am sure that she thought cooked mean putting into the oven - but not sure of what happened after that! :O)
She did make very good Banana Icecream Boats though.

Very British, in fact very Yorkshire. No, just very Hull. Dull, meat and two overcooked veg. She used to do great pies, not so much now though. I took over the kitchen at 12 and I think she forgot how to cook. No pasta, no rice, nothing foreign.

My mother, bless her soul, was a total 1960's cook. Same stuff, over and over again. Steaks, baked potatoes, the same salad, pork chops, salmon loaf. Don't get me wrong, it was all good, just not a lot of variety.

I gave up eating wi' ma folks many moons ago, when I hud tae come home tae three hour old super noodles and dried up meaty lumps!!! I think she still does the oven roasted beef and the pasta thingy... My dad seems tae like it, but it duzznae suit ma strange shifts.....
