Thaw 2 pkgs of frozen chopped spinach. Squeeze out liquid.
Saute with 3 cloves of minced garlic in a little olive oil. Add 1/2 tsp. of nutmeg & some salt & pepper while it's sauteing. Turn off the heat, mix with 2 softened pkgs of cream cheese & 1/2 C of grated Parmigiano Reggiano. For a little kick, stir in 1/2 tsp. of cayenne pepper. SO EASY & GOOD!!!

I've always used the one from the back of the packet of Hidden Valley Ranch powder. It's the HVR recipe but with frozen spinach, thawed, and squeezed. I also add a can of chopped up water chestnuts and a little extra garlic powder. And then bake it in a bread bowl wrapped in foil. Although a souffle dish would work too.
