My mother used to make pease pudding, with green split peas. And sweet rice pudding that she slow-cooked for an eternity, which came out of the oven bubbling underneath its brown skin. The Christmas pudding was a real tradition, with everybody stirring and making a wish.

Pudding to me is a lovely steamed suet pudding with custard. It can be any sort but my favourite is chocolate with chocolate custard.
