Why not take a look at network marketing, if she has been working in a gas station and grocery store she must be used to working with people.
Network marketing is ideal because you do not need any experience, only a desire to change your lifestyle. Also you would be earning whilst you are learning, because although you would be working for yourself you would not be by yourself, there would be a team of others making sure you were successful.

Without getting some additional education or training, retail jobs will probably be about the only place to find a job.

Sorry your friend is stuck in that environment because your friend can't move on without without any education at all.
