It should have a "use by" date on the can. If it is opened then I wouldn't use it after 4-5 days.

do you mean canned pumpkin you find in the store or canned pumpkin you canned yourself?

I would say the canned pumpkin from the store should be good until the due date on the can. If you opened the can and left it in the fridge.....it might not last all that long in there since pumpkin seems not to do well after a few days in the fridge.

If you canned it yourself......my Mom had some since '96 she canned and it is still good

True confessions:
I made pumpkin dip at Thankgiving from a can that I was saving from several years ago. (I think I brought it over in 2003)

It's impossible to find canned pumpkin here in Spain- so I tend to save what I bring over from the US for special occasions.
I finally realized I was being crazy, and got sick of saving it for later. (It's not wine- later doesn't necessairly mean better-lol)

I haven't died yet- and the dip was good. It didn't even taste like can.

IN the can? It's good until the can bubbles on the top or bottom.
