my twin daughters are very, very fussy and slow eaters. the weather is really cold here and there is no re-heating facility at their school. i need some recipes that will stay fresh and crispy for atleast 4 hours.

Hi, Best thing to do is probably go for easy recipes with a lot of fruit and vegetables.Here are some healthy recipes from Vegkitchen.com

CINNAMON-RAISIN TOAST: An all-time favorite in our home! Raisin bread makes great cinnamon toast. Simply toast fresh raisin bread, spread lightly with non-hydrogenated margarine, and sprinkle lightly with cinnamon and natural cane sugar.

INSTANT CREAMY DIP FOR RAW VEGGIES: Simply combine about 1/3 cup each soy mayonnaise and plain low-fat organic yogurt or soy yogurt in a small bowl. Sprinkle in a little dried dill and seasoned salt. Stir until smooth. Serve with baby carrots, small broccoli and cauliflower florets, bell pepper strips, and other raw vegetables.

SKEWERED FRUIT: Any presentation that adds a bit of interest to fresh fruit is always welcome. Simply cut any fresh fruit in season into bite-sized chunks and alternate on wooden or bamboo skewers with grapes (organic fruit preferred, of course).

PAPER BAG POPCORN: Did you know that all popcorn is microwavable? If you buy your own organic popcorn kernels in bulk, it's not only much more economical, but you are the one who controls how much salt (if any) goes on, and you get non of those preservatives or hydrogenated fats. Here's how: simply put 1/4 cup unpopped kernels in a lunch-sized brown paper bag. Fold the top over and secure with a couple pieces of tape. Microwave for two minutes or so, or until you hear the kernels finish popping. Transfer to a large bowl, sprinkle with salt to taste. If you'd like, drizzle a small amount of melted nonhydrogenated margarine on the popcorn and stir well.

Nuts on dates:
Stuff 1/4 mixed nuts or almonds inside 10 small dates or 1 cup seedless grapes.

You could give them small cups of salsa and some veggies.
Nectar (by Clif Bar) makes fruit and nut bars that are pretty good.
Give them raw celery, a small container of peanut butter, and some raisins, and they can make Ants on a Log.
You might want to check out the Vegan Lunchbox for even better ideas for keeping food fresh for hours between the start of school and lunch time.

Air popped popcorn
1 healthvalley oat bake bar
1/4 cup soy nuts
10 maked tortilla chips with 2 t Salsa
2 ribs celery stuffed with light cream cheese
2 ribs celery stuffed with pb and raisins
1/2 cup cottoage cheese with pineaple and orange sections
1/2 oz low fat cheddar and 1/2 cup grapes
1 oz hard baked pretzels
1 oz trail mix
quaker chewy bar
toast with banana and honey
apple with pb
1 kellogg nutri grain bar
sesame sticks
pumpkin seeds
breadstick with hummus

I also love any all-natural Black Bean and Corn Salsa..... Newmans Own is my favorite, with Desert pepper running a close second. All of these products can be found at any good health/organic store.

I heard that children are a lot more likely to enjoy raw vegetables if they have a small cup of Ranch dressing. (Fat free is an option).
Carrots and Celery, broccoli, and cauliflour then all become options.
Nuts, granola bars are good also.

Almonds and raisins together.
Celery with peanutbutter and optional raisins.
Apples.
Snack bars. You can make your own or buy them.
Peanutbutter and jelly.
Any dried fruit.
Mix cereal, nuts, and dried fruit to make your own trail mix.

peanut butter on celery, quick wok fired cauliflower buds with cheese and peanut butter sauce,potatoe boiled cubed cooled for potatoe salad DO NOT use mayonnaise ....mushroom soup thickly mixed for sauce with tinnedmint peas mini-diced baconand grated cheese and carrot, creamed sweetcorn, and you cant go wrong with apple or tomatoe juice..

Stop spoiling your children. This is going to be a rod for your back in time. No healthy child will willingly starve to death. Just pack what you believe is good for them and they can either eat it or bring it home. When they get home, they can have it or wait till they are hungry enough. Many children would be glad to have enough food. Just work on the basis that you are the Mom and you make the decisions. Just don't be a rag to your children or you will suffer.
