When I make Frijoles I never can seem to get the flavor right. Mine are intended for bean and cheese burritos.. Everytime I make them, they don't taste right. There is a very good mexican restaurant where I live called Tlaquepaque where their bean burritos are outstanding. I'm trying to get mine to taste the way they do in an authentic mexican restaurant. What am I missing?

I sort through the beans first and discard the bad ones.
I then soak them overnight.
I usually cook them with a chopped onion some salt and pepper and a tablespoon of bacon grease. I've also tried them with and without garlic. Still they never taste the same as the restaurants... Please any help would be appreciated :).

I am cooking beans right now, am mexican and I live in Mexico City, this is the way I cook them

After cleaning and soaking ( I just soak them for 30 mins) LOL
Put beans (black for today) water, 1tbl spoon of oil, garlic or onion, cook them and when they are cooked soft and nice... add salt that way they wont get "hard" they will be nice and soft. Enjoy!
I love black beans with epazote and pork skin... mmmmm just add some salsa... great!

First stop soaking them over night. Do sort them, put them in the pot add your water, fresh onion and garlic then let them start to cook. Do not add any salt until they are half way done.
After they are cooked, Add bacon grease to pan and fry them up while you are smashing them.
Remember the cheese you use also counts in the taste.
I would use a Mexican cheese when making your Burritos!
If after all this you still can't hit the taste...You just don't have the knack for duplicating restaurant flavors! LOL

There are many authentic Mexican food restaurants who's food i like very much.

My Mexican mom's food made with about 70 years of cooking experience, i also like very much.

However, the two never taste alike !

My father who is older than my mother once told me that in the 1940's when he lived in L.A. as a zuit suiter, there was a lady who sold street stand burritos that everybody liked, she put ketchup in the refried beans. I've tried it..............tastes good !

well u get the onions and tomatoes and tacos blended up. Then u grind as many versions of beans possible. finally get a bell pepper and grind it up in a plastic bag. Thats the 1st step. Now all u hav to do is put it in a bottle, and place it in the hot sun for 40+ hrs.

i usually put a little bit of red chilli powder, a teaspoon of cooking oil and a jalepeno then i boil them dain them and then smash them with some milk and longhorn cheese, but with bea burritos i like cotijo cheese and enchilada sauce on em yum!! lol well good luck and if you need any help my email is mychellemy@yahoo.com

Cumin or maybe epazote? Try asking the restaurant just what spices they use.
