Moosewood recommended above is full of dairy and eggs last time I checked. "In the Garden of Vegan" and "How it all Vegan" are good, fairly easy beginner vegan cookbooks. In a pinch, go to www.vegweb.com for recipes. It is a vegan site where you can search for recipes (if you suddenly need to eat pudding, but don't want to wade through cookbooks, just search pudding and you will be on your way!)
Cookbooks are a personal thing, I find it best to stand at the vegetarian section of a bookstore and flip through books to get a feel for them. Some are filled with "Fennel Leek Risotto" and some have everyday foods.

Check out "How it All Vegan!" and "Garden of Vegan" by Sarah Kramer and Tanya Barnard and "La Dolce Vegan" by Sarah Kramer.

"The Vegetarian Meat and Potatoes Cookbook" by Robin Robertson has no salad recipes, but does have really hearty meals.

I also like www.vegweb.com.

You may want to look at the "Moosewood Cookbook" or the cookbook put out by Greens restaurant in San Francisco, called "Greens."

the authors of "Skinny B***h" just came out with a cookbook: "Skinny B***h in the Kitch." it has a wide variety of foods, but be warned, a few of them call for ingredients i've never even heard of! vegan cooking is definitely a whole new world, especially if you want to create new versions of things like mac-n-cheese.

sorry i can't
as i am rubbish at cooking and could not do a decent meal to save my life
