i have been trying different things with tofu lately and i was wondering if there are any good recipes involving tofu of any kind (silken to extra firm). i have done asian style llike stir fry and such im loking for something new a different. any ideas???

Tofu Scramble is my favorite way to eat tofu!

FoxyVegans Kitchen Sink Tofu Scramble

1 block of firm or extra firm tofu
1 tablespoons of oil
any kind of veggies you have on hand (I like bell peppers, onions, mushrooms, greens like kale or spinach, and a lot of garlic)
A few pinches of turmeric (for that yellow color)
A few good pinches of cumin

Take a block of firm or extra firm tofu, crumble it up in a skillet coated with a little olive oil and cook until the tofu is no longer watery. Add the veggies and cook until your desired level of doneness. Add some turmeric so the mixture looks a little bit more like scrambled eggs. Add cumin to taste and there you go, a good nutritious breakfast.

1 lb tofu, sliced
1/4 C nutritional yeast
2 tbsp flour
1/4 cup lemon juice
2 tbsp soy sauce or tamari
1 tbsp vinegar (pref balsamic)
sliced bell peppers
chopped green onions
capers

Saute tofu on both sides until it starts to turn a golden color. Add nutritional yeast and flour and stir to coat. Add lemon juice, soy sauce, and vinegar, and stir until liquid is absorbed. Add veggies and saute until they're tender-crisp. Serve.

Easy, qucik, healthy and tasty Enchiladas:

2 low fat corn tortillas
1/2 cup baked pinto/black/red beans
1/2 cup extra firm tofu pieces
1/2 onion chopped (optional)
1/4 cup salsa
4 low fat cheese slices (any kind, I like cheddar)

In a bowl, add salsa, onion and beans. Microwave for 1 minute. In a microwavable dish, take the 2 tortillas and fill each with the warm salsa/bean mixture and tofu. Place a cheese slice inside and fold the tortillas and press edges firmly to stay folded. u could also use a pick to keep them folded. Now place the second cheese slice over the fold to seal.
Now spread the remaining bean/salsa mixture over the stuffed tortillas and microwave for 1 minute.
Serve hot



Quick and easy stir fry:

1/2 cup frozen/fresh stir fry veggies (broccoli, mushrooms, bok choy, carrots, bell peppers...)
1-2 tbsp soy sauce
1-2 tbsp rice vinegar
1-2 tsp chili sauce
1-2 tsp peanuts
1-2 tsp sesame seeds
1 tsp olive oil
1/2 cup steamed noodles/brown/white rice and extra firm tofu pieces
salt and pepper to taste

In a wok, add olive oil and sesame seeds, peanuts and veggies. Stir fry for 1 minute on HIGH flame. Then add soy sauce, vinegar, chili sauce and rice/noodles/tofu, stir fry for 2-3 minutes on HIGH flame. Add salt and pepper to taste and serve hot. You add 5-6 tbsp of coconut milk if you want it as a veggie gravy to serve over rice.

Best tofu recipe ever is agedashi dofu (tofu)... drain, cut and cube tofu and then roll it in potato starch (any starch will do but potato is best). Fry it in oil and then serve it in a runny sauce made by heating soy sauce, seaweed stock, mirin (rice vinager) and a bit of sugar. All the ingredients can be found in a japanese shop/market pretty cheaply.

Or you could roll it in flour, then egg replacer or soy milk and then panko (japanese breadcrumbs). Fry and then serve with bulldog sauce (fruit and veg brown sauce).

oh! i love tofu! its like, my favorite food ever! my mom makes this with annies mac and cheese. if your vegan, just eat it with noodles

2 blocks extra firm drained and sliced into rectangles

1c. nutritional yeast
1/2 tsp. more if you like it curry (to taste)
1/4 tsp dill
1/2 tsp salt and pepper

coat the tofu in the yeast mix and fry it in a medium heat pan
when all is fried, throw it back in the pan and drizzle with soy sauce/tamari
its soooooo good. its like comfort food. you can also use this mixture on potatoes for hash browns

this is actually the best i have ever had... it is called miso soup. you can find a recipe for it or it is also pre made and sold at walmart on the asian isle. it is a very mild broth soup with leeks and carrots and tofu. try it and you will be hooked.
