does anyone know of a good vegetarian recipe book which has healthy dishes? Like the dishes which are high in whole grains, fiber and low in fat/cholesterol?

i don't like online recipes because computer is not in kitchen and making printouts wastes cartridge ink.

I would like diverse vegetarian dishes from all around the world instead of dishes from one region only. I like trying new dishes.

1,001 Low-Fat Vegetarian Recipes... This is the very first vegetarian cookbook that I bought and the one I use the most because it has a little bit of everything and it has nutritional information in it, which is something I rarely see in vegetarian cookbooks.

My favorite books are Vegan with a Vengeance by the Post Punk Kitchen chef Isa Chandra Moskowitz, the Candle Cafe Cookbook has recipes from a famous New York renowned vegan restaurant. The book that started it all is John Robbins' May All Be Fed: Diet For A New World. It is a good read also.
And my other favorite book that has some delicious recipes and if I have the time I just make them fast on the stove/or in the oven:Robin Robertson's cookbook "Fresh from the Vegetarian Slow Cooker". Then again it is nice to put the meal together in the morning, plug in the slow cooker, and have dinner when I get home at night.

The Enchanted Broccoli Forest by Mollie Katzen. I bought this cookbook about 15 years ago and didn't realize it was vegetarian until I got it home. I'm not vegetarian but I've made about 75% of the recipes and they've all been great. The only bad part is my edition doesn't have the fat count. Maybe there's a newer edition with that information.

Vegan Planet or Vegetarian Planet. Passionate Vegetarian (Crescent Dragonwagon). The Vegetarian Meat and Potatoes Cookbook.

Most vegetarian cookbooks written within the last ten or fifteen years are low-fat. On one hand, this is nice. On the other hand, vegetarians like to eat crap too, once in awhile.
