It is not healthy or balanced. You will likely get sick if you eat only like this and then six months from now you'll be posting on here about how you tried a vegetarian diet and it made you sick! Please pick up a book about vegetarian nutrition (I recommend BECOMING VEGETARIAN) and educate yourself on vegetarian nutrition. Good luck!

You are definitely not eating enough. Keep in mind that a healthy vegetarian diet is generally lower in calories and fat than a meat based diet. Feel free to eat a little more, just don’t pile cheese on everything and try to stay away from junk food. You need to include more…

Calcium- cheese, yogurt, milk, soy milk, calcium fortified juice
Iron - Dark leafy green, lentils, beans
Protein - Seitan (wheat gluten), tempeh, tofu, veggie burgers, beans, lentils… there are plenty of other mock meats available like smart dogs (fake hotdogs) and smart bacon (fake bacon). Most well stocked health food stores have a great selection of fake meats.

Don't forget whole grains like oatmeal, brown rice, whole grain breads and pastas etc... plus quinoa is a very nutritious grain it contains a lot of protein and calcium.

This is what I ate today for my diet.
Breakfast - Fruit, fake bacon, oatmeal with raisins, flaxseeds, and soymilk.
Lunch - small salad with veggies, homemade veggie burger with tomatoes and smashed avocado on a whole wheat bun.
Dinner - marinated tofu stir-fry with brown rice
Snacks - apple, half baked potato with tomato sauce and soy cheese

It’s always a good idea to take a multivitamin supplement, especially while making the transition. I hope this is helpful.

That is definitely not enough food in one day. that's more like a meal... (1 potato would be a meal). I'm a vegetarian and still have enough food options to get the required nutrients each day. For example, for breakfast I have whole-grain English muffins or wheat cereal with nonfat milk and some fruit. I always have a snack, such as nuts or more fruit. For lunch, make sure to include proteins, such as dairy, cheese, eggs, nuts, beans, etc. I usually have cheese and crackers, a salad, pasta, or veggie sandwiches. Then make sure to have a balanced meal for dinner that include a lot of veggies and protein. You should try to have at least 3 meals per day (or six small meals) and (it depends on your weight) if you are active you need much more than what you eat to maintain a healthy weight. I am active and thin and need at least 1800 calories per day to maintain energy.

I hope you posted this early in the day with plans to eat more. You need to eat a LOT more every day. Depending on your age and gender, you need between 1,500 and 2,200 calories to sustain yourself.

If you like A1 on your potatoes, that's fine; I read the label as a matter of curiosity, and it appears to be vegan. But have some tofu with your tater and salad. The next day, have a seitan dish with rice and other veggies. Or a tempeh chili with beans.

Eat a variety of fruits, vegetables, grains, beans, and nuts, and you will be fine. But, hey, I'm a potato freak, too.

Wow! You make me feel like a glutton, that's what I would have for just one meal and I'm only 5'2" and weigh 105lbs! That is not enough food for good nutrition. I've included a link for the vegetarian food pyramid that should help give you an idea of how to plan your meals. http://www.vegetarian-diet.info/vegetarian-food-pyramid.htm

If I'm not mistaken I think the amount of fruit & veggies has been increased to 5 - 9 a day.

No, it's not healthy. Why?

~~ little or no protein
~~ little variety
~~ I see no iron or calcium sources

To your salad, you could add:

~~garbanzo beans (chick peas) or any cooked, canned bean
~~ shredded cheese
~~ boiled egg
~~ tofu

Eat one potato, maybe topped w/ broccoli & cheese; then eat something else for the other meal, like sauteed veggies (squash, zucchini, carrots, onions) with peanuts, "asian" style.

Have 2-3 (8 oz) glasses of lowfat milk or yogurt each day, too.

Is dependent on the context really. Which is better as a snack - fruits for me personally. It's tastier and gives you that little bit of sweetness. Which can be better as a snack if you are trying hard to minimize back on sugar and lose weight vegetables

That's definately not enough. You should start eating more frequently but in less volume.

Go Veggie!
