Pure Veggie - Spaghetti with Broccoil and Pesto sauce

Flexi - add tuna to the above.

Both of these dishes are very tasty.

There are some italian dishes that work fine with no meat (though cheese certainly helps). Eggplant Parmesean, for instance. A spinach calzone or lasagne is really good, and you can substitute tofu for the ricotta with good results.

okay, tofu is like, the best thing ever. my mom makes this with annies mac and cheese.
2 blocks firm tofu cut into thin rectangles
nutritional yeast (get it at a health food store)
curry
dill
salt
pepper

mix all the seasonings with the yeast (mixture should be mainly yeast)
dip tofu in the mix and fry in a pan (med heat-too high they'll burn, to low the seasonings dont stick)
once all tofu is cooked throw them all back in the pan and drizzle with soy sauce

its sooooo good! its like comfort food to me
you can also use the mixture on homefries
