Sure, you could freeze it. But it might come out funny (I've never tried to freeze and thaw mushrooms or gravy) or get forgotten. Then you'd have wasted all the great gravy.
Why not just transform it? Can you make it into mushroom stroganoff? It would definitely work as a soup base. Could you amp it up with extra veggies and other goodies? I'm willing to bet it would be great under mashed potatoes as a faux shepherd's pie.

Any gravey is a great soup base - so freeze it in ice cube trays and the next time you want a pot of soup throw some in a pot with some vegetable stock, lentiils, onions, any vegies and some barley and simmer - yum also make a vegie pie or mock chicken pot pie with vegies and tofu with the gravey as a base and throw some puff pastry on it and into the oven serve with champ (mash with spring onion and peas

Cook it into a stew with cubes of root veggies, beans or tofu.
Use it as a sauce base in a veggie pot pie or in a shepherd's pie or pate chinoise using TVP or soy crumbles.
Make hot, openfaced sandwiches with fried mushrooms, onions and tofu - place it on a slice of bread and pour the gravy overtop the whole mess.
