re:
pancakes are not EXTREMELY healthy. at least not if you use enriched bleached flour to make them. if you use whole wheat flour in your mix and don't use butter then yes they can be healthy with added fruit and such. but check what you make your pancakes with before you consider them 'extremely' healthy

I like a nice bowl of oatmeal for breakfast - not the instant packet kind but real rolled oats. If you have a Cracker Barrel restaurant near you, order their oatmeal with fried apples and stir them into the cereal, along with a side of their whole wheat sourdough toast. That's a good breakfast with some OJ and coffee.

Yogurt with fruit or granola is great and packed with essential proteins, calcium and fiber. I would recommend mild plain yogurt and adding your own fruits, granola, or grape-nuts. Flavored yogurt tends to be loaded with sugar. Alternatively, eat an apple, banana or some other fruit. You could also try one egg on toast.
Try this yogurt, it's awesome, honey flavored is my favorite:

Usually I eat a sort of brunch rather than breakfast. This is easy for me because I come to work at 10:30am. I eat leftovers from the night before ( a vegetarian meal, usually pasta or rice dish w/ veggies). I might have a snack in the afternoon, fruit, seeds, crackers or granola bar. This holds me over til I'm ready for a vegetarian dinner at home.

I get some English muffins that are whole wheat and have raisins added. I eat that with some lowfat margerine when I need a break from oatmeal. Also, fresh fruit with whatever you choose will stock you up on vitamins. Soymilk is a good, healthy, addition to breakfast and its healthier than regular milk (less fat).

Well if you eat chicken why not turkey. Turkey bacon or sausage is good and much healthier than pork. Hard boiled eggs. You can poach some eggs in water on put them on top of some whole wheat toast sprinkle with salt+pepper. Cream of wheat, sprinkle with raisins or fresh strawberries. Yogurt, they have organic brands. You can cup up some apples and dip into some vanilla yogurt.

I've been following this book called "Skinny B#^$^$"...which says that you should only eat fruit in the morning. Since you-yourself naturally don't have much of an appetite when you get up I suggest doing the same. Just have a few strawberries, a banana, or a smoothie.

The best food you can put in your body for breakfast is fruit.
Just pure organic fruit, nothing more.
I love to have an apple and banana for breakfast. Sometimes I'll eat 2 kiwis instead.
The book skinny bi+ch will inform you more of why fruit is such a great breakfast!

i dont have an appetite in the morning either, so what i do is i make a smoothie. i have a recipe thats delicious and i look forward to drinking it in the morning.
smootie:
2-3 scoops of vanilla ice cream or any fruit flavored sorbet.
1 cup of milk
2 handfulls of strawberrys. (or any berry or fruit)
thats it. its so simple. just whip that up in the blender or food processor and drink up. its amazingly good and i think this would be good for you since you dont have that much of an appetite in the morning. but its so good that you dont realize how much your drinking and it fills you up and your good to go. and its really healthy too.
so give it a try.

acctually, im not sure where u learned but pancakes are extremely healthy... they have low sugar and high carbs for the morning. the only unhealthy thing about them is the syrup but instead you can fill them with sliced strawberries and bananas maybe a little cinnamon. no need to top it with anything! its like eating a really hearty fruit bread. eggs florentene are delicious, poached eggs(really healthy) on a bed of wilted spinach and tomatos usually served with hllandaise but you can skipthat part. serve on toast or english muffin!
