PB&J and variations. Try apricot preserves and cashew butter (if your kid's the adventurous type).
You can also make some sort of salad and pack it in tupperware. Include a pita bread so they can make a tasty filled pocket bread. (If the salad is dry, you can pre-pack; otherwise, the bread could get soggy.)
Try cold veggie pizza or a thermos of hot soup.
If they like dips, just do a veggie box with a container of hummus, baba ganouj (less popular with the kids but worth trying), or a creamy-something- (sour cream, drained yogurt, etc) based dip.

I'm a vegetarian myself. Pasta salad in a tupper ware with veggies. Sandwiches with veggies and cheese, or pb&j, pb&bananas, and other variations. Pasta and marinara sauce in a thermas or any sauce. For a side, a fruit salad, and many others. For further reference, go to any food websites and look up vegetarian recipes.

Pasta w/ marinara sauce, if you have Boca Itailan Sausages (vegetarian) cut them up and add it to the sauce. Leftover spaghetti wrapped in a tortilla for lunch. Soy Yogurt - add granola and fruit. Gardenburger Bacon as in a BLT. Mash up chickpeas and make like tuna - add celery, pickles and seasoning, stir in Vegenaise. My son liked leftover cold tofu from the night before - fry tofu in whatever spices you have on hand in olive oil, hot pepper sesame oil and a little soy sauce. Put it on bread with mustard, veggie cheese and tomatoes. Cold soybeans. Basil, Tomato and Mozzarella Sandwich INGREDIENTS 1 (1 pound) loaf Italian bread 6 fresh basil leaves, chopped 2 tomatoes, sliced 4 ounces fresh mozzarella cheese, sliced (Soya Kaas) 1/8 teaspoon red pepper flakes 1/2 cup balsamic vinegar DIRECTIONS Slice the loaf of bread in half lengthwise. Layer the basil, tomato slices, and mozzarella cheese between the two halves of bread. Cut into four sandwiches. In a small dish, stir together the balsamic vinegar and red pepper flakes. Use as a dipping sauce. Quorn turkey roast - use like turkey in a sandwich and use leftovers in soup Vegetarian Chicken Noodle Soup 6 cups of pure water ¾ cup Vegetarian Chicken Soup Base 6 organic celery stalks, chopped 1 ½ cups sweet onion 6 carrots, chopped finely 1 package organic noodles (rice, corn or barley) 1 package of Quorn Tenders (or use leftover Quorn Turkey Roast cut up) Sauté Tenders lightly in olive oil. Heat water, add soup base, stirring gently. Add vegetables, noodles (consider breaking them into 1-2 inch pieces) and Quorn Tenders.

Growing up my absolute favorite was squishy grain bread (just a soft bread) with smooth peanut butter, slices of banana, raisins, and honey! It is still on of my favorites and now I'm in college! It's one of those foods that I eat when I'm stressed and wish I was still living with my parents! ;-)
Also, egg salad sandwiches (protien) and hummus in pita breads with grated carrots and sunflower sprouts!! mmm!
Yaya's Popcorn is awesome (found in health food stores), cheese flavored!
