Sushi actually refers to the rice which is seasoned with vinegar. It is sticky and can be made into different forms and shapes and is often rolled in seaweed (nori). Sushi does not have to contain fish it have almost any other additions but must have the rice to be sushi.
Sushi is the Japanese version of tapas, appetizers, mezzes, etc. It is the rice not the fish that makes it sushi.

Well, "sushi" without the fish is rice. But if you include maki rolls in your definition of sushi, then the answer would be "Vegetarian Maki." Plenty of sushi restaurants have a good selection of vegetable rolls.

It's still sushi. You can have vegetable or a piece of egg, or a piece of cucumber, and so on; california roll has surimi (that fake crab) - excellent!
You might be thinking of sashimi? That is a piece of fish (which is usually placed on top of the rice with a bit of wasabi between - no roll).
