I've noticed of all the Sushi restaurants that I've been too, they are either owned or have workers that are Vietnamese. I can usually tell when they speak to each other what ethnicity they are, but majority of the time they would speak English. Maybe it's because I go to the lower end of a Sushi Restaurant, if I were to go to one in Downtown San Diego, to a more pricey restaurant maybe I'll find one that actually has Japanese people working.
