Most vegan cookbooks list ways to substitute eggs in a recipe. I use the Ener-G Egg Replacer. For each egg, you use 1/2 tbsp of the powder and 2 tbsp water. Mix thoroughly before adding to the batter.

a very easy egg-free cake is one cake mix, any flavor, mixed with one can of any flavor soda. mix the two together and then you bake following the package directions. i have made it many times and it's pretty simple, albeit not really a health conscious choice. but i don't even notice any taste difference and it's quick and easy!
