i m irish and we use smoke or fresh cod and sometimes ray heres the recipe i use for the batter
Ingredients:
1 cup all-purpose Flour
1 tsp Baking Powder
1/2 cup Cornstarch
1 cup Water
2 tsp Salt
1 tsp Sugar
1 tsp Oil
Directions:
Mix all of the ingredients together and blend until there are no lumps. Preheat the oil in your deep fat fryer to the proper temperature for the food you are cooking. Dry the fish with a paper towel and dip into the batter. Place in the hot oil one piece at a time. Try to keep the pieces from colliding until the batter has had a chance to set (which it does almost instantly). Cook until the batter has turned a golden brown, remove to a paper towel to drain and serve at once. Serving size: enough for about 2 pounds of fish.

Cod, and the batter is standard batter but with half the milk replaced by Guinness. Also, like good Yorskhire pud, it's better if youleave the batter mix to stand for at least an hour before using it on the fish.
The trick is to get the oil hot enough before you put the fish in so the outside of the batter seals quickly and the inside doesn't get oily.
Serve with chips, mushy peas and...well,Guinness of course!

In most chip shops here in ireland it is cod that is used and the batter is made from flour eggs and milk.. a surprising question from an italian as there are italian fish and chip shops everywhere here!!!!

The main fish used i.e.as bought in fish & chip shops would be cod as for the batter I am not 100% but I think it's flower and water mixed,the fish is dipped in then put straight into boiling oil.

here in the North of England, we can use cod or haddock. i think haddock is the best, flour and water makes the best batter. ice-cold water is best. really makes the batter crispy.
