I have a bit of leftover firm tofu, but not too much time. Do you know anything quick simply and tasty I can make with it? Without any fancy ingredients -- I live in India, and available ingredients are limited...

Use a little olive oil and stir fry it with your favorite vegies (I love to use squash in my stir fry!). Also try toss in some sunflower seeds, it makes a great texture and flavor. Use soysauce to season it and put it over some brown rice. Yummy!

Take the tofu and mix it with egg, whatever veggies you have available, and stir fry.

Or take the same mixture and make patties that you can bake in an oven or on a hot stone plate.

Sprinkle currie powder on top of the cooked patties and rice and there you are.

Not knowing the seasonings available in India, add whatever makes you comfortable.

Dip the tofu in soy milk. Make a mix of flour, nutritional yeast, whatever seasonings you have on hand. Dredge the tofu in the flour mix. Fry in oil.

Cube it, cover it in potato starch (or any other starch but potato is best), then shallow fry it and serve with runny sauce. The best is by heating soy sauce, rice vinager (mirin), sugar and seaweed stock if you can find it out there. You can buy all the ingredients from anywhere that sells japanese food.

Or you can cover it in soy milk or egg replacer and then roll in breadcrumbs, fry and serve with sauce.

You could simply make a curry with rice with it and add some coconut milk, or you could try baking or frying it and then mixing it into a salad or whatever you like with cumin and whatever else you like.

I just cut it into 1 inch cubes, cook in a pan with some oil til it browns, mix with rice and soy sauce (or sauce of your liking.)

tofu salad...its kinda like tuna salad...take the tofu, break it in half, and cruble each half with your hands...then add what youd put in a tuna salad...mayo...(you can use the vegan mayo), mustard, and spices...then put it on toast! its delicious!
