I would like to make pies like pumpkin or pecan without using egg and premade mixes like brownies.

you can use Ener-g egg replacement, or you can replace one egg with one banana, it's just for the whole texture thing

Agar agar is a gelatin substitute. I haven't heard of it being used for egg. What to use as a substitute depends on the application. If the egg is to be leavening, say, it's different from when it's binding.
