Well, just asking of course will be the only way to know for sure. I tried googling both, and they for one, are both used as names for people. (so that may be significant to the creators of the dishes) I found a Wing Ming that was a researcher in China, and a couple of Sum Yum's (which means love for, by the way). That's about the best I can find on short notice...I hope it helps!

Duck feet and pot head??? That is great!! Love your sense of humor. My advice to the questioner is to frequent both restaurants and question the owners for the meanings of wing ming and sum yan. Aren't they the logical answerers?

1. There are no formal rules for phoentically mapping Chinese character pronunciations to English words.
2. There are hundreds of dialects of Chinese - where the same Chinese word is pronounced completely differently depending on which region of China you're in.
3. Most Chinese pronunciations have subtle variations in pitch that all map to the same English word.

What this means is that there is no way to tell what these words mean unless you can get someone who can read Chinese to read the Chinese names of the restaurants.

If they are not the name of the owner, they are usually nonsense words or familiar phrases used just to indicate they are Chinese.
